SZ Szechuan
Chili and Szechuan peppercorn together, so the heat arrives with a tingle rather than a burn. Bold and layered. Order this when you want the food to have an opinion.
HU Hunan
Hotter than Szechuan and drier with it. The chili is pure rather than numbing, often smoked or pickled, and the sauces are cut with vinegar. Clean fire.
CA Cantonese
The gentlest of the three and the hardest to fake. Light sauces, quick cooking, and the flavor of the ingredient left where you can taste it.
